Peanut Butter Cookies….
- measuring cups
- whisk or mixing spoon
- measuring spoons (teaspoons, tablespoons)
- cookie sheet (ungreased)
- 2 mixing bowls
- 1 cup sugar (OR 1/2 cup white and 1/2 cup brown sugar)
- 1/2 cup butter (1 stick) at room temperature
- 2-1/2 cups peanut butter
- 2 eggs
- 1-1/2 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
Preheat oven to 375°.
Place butter in mixing bowl. With a whisk or mixing spoon, beat the butter until smooth and then and sugar. Mix well.
Add the peanut butter and eggs to the bowl. Mix well.
TIP: An extra egg will make a chewier cookie. If you add fewer eggs, you will get a crumbly cookie. This recipe calls for 2 whole eggs, so it's very moist.
In a separate bowl, combine flour, salt, baking soda, and baking powder. Mix well.
Add dry ingredients to the sugar and butter mixture. Combine well.
To form cookies, roll dough into 1-1/4 inch balls, flatten slightly and, using a fork, make a crisscross pattern on top of each dough ball. Place balls on an ungreased cookie sheet and bake for 10 minutes or until almost golden-brown.
