Trust us, this is goooood stuff.
- Food processor or blender
- Parchment paper
- Baking sheet
- Measuring cup(s)
- Measuring spoons (teaspoons and tablespoons)
- Cookie/biscuit cutter
- 1 1/2 Cups of Gluten-free all purpose flour (ex. Bob's Red Mill)
- 1 Tablespoon sugar
- 2 Teaspoons baking powder
- 1/4 Teaspoon baking soda
- 1 Teaspoon xanthan gum
- 1/2 Teaspoon salt
- 1/4 Cup shortening
- 1/2 Cup milk
- 1 Large egg white
Preheat oven to 350°, and line a cookie sheet with parchment paper.
In a food processor, pulse dry ingredients and shortening until mixture is the consistency of small peas.
Add egg whites and milk to food processor, and blend until dough forms a ball. Use a spatula to scrape down sides.
Lightly dust a large piece of parchment paper with flour, and spread dough evenly over paper to 3/4in thickness. Dust top of dough with flour.
Use a cookie cutter to cut biscuits out of dough, and place biscuits evenly on parchment paper-lined cookie sheet. Re-flatten excess dough and cut more biscuit shapes.
Bake 12-15 minutes or until lightly browned. Serve warm!
