Gluten-Free Biscuits

Trust us, this is goooood stuff.


  • Food processor or blender
  • Parchment paper
  • Baking sheet
  • Spatula
  • Measuring cup(s)
  • Measuring spoons (teaspoons and tablespoons)
  • Cookie/biscuit cutter


  • 1 1/2 Cups of Gluten-free all purpose flour (ex. Bob's Red Mill)
  • 1 Tablespoon sugar
  • 2 Teaspoons baking powder
  • 1/4 Teaspoon baking soda
  • 1 Teaspoon xanthan gum
  • 1/2 Teaspoon salt
  • 1/4 Cup shortening
  • 1/2 Cup milk
  • 1 Large egg white


  1. Preheat oven to 350°, and line a cookie sheet with parchment paper.

  2. In a food processor, pulse dry ingredients and shortening until mixture is the consistency of small peas.

  3. Add egg whites and milk to food processor, and blend until dough forms a ball. Use a spatula to scrape down sides.

  4. Lightly dust a large piece of parchment paper with flour, and spread dough evenly over paper to 3/4in thickness. Dust top of dough with flour.

  5. Use a cookie cutter to cut biscuits out of dough, and place biscuits evenly on parchment paper-lined cookie sheet. Re-flatten excess dough and cut more biscuit shapes.

  6. Bake 12-15 minutes or until lightly browned. Serve warm!
