Green Salad with Italian Vinaigrette

Fresh salad with homemade vinaigrette

  • 6oz Lettuce ( 2 heads of green leaf or equivalent)
  • 1 pint cherry tomatoes cut in half
  • 1 cup shredded carrot
  • 1/4 red onion
  • 1 cucumber cut into half moons
  • 1 cup grapes sliced in half
  • 1/4 cup white wine vineger (substitute red wine or apple cider vineger)
  • 1/2 cup canola or olive oil
  • 1tbs dijon mustard
  • 1 tbs dried oregano or basil (double if using frest
  • 1/2 tsp salt plus 1/4 tsp
  • 1/4 tsp pepper


  1. Cut lettuce and rinse/dry (use a salad spinner, or towel

  2. Shred carrots (or use pre-shredded)

  3. Slice onions thin in a separate small bowl and sprinkle some vinegar on them and toss

  4. Combine all of the salad ingredients into a large bowl. Sprinkle with 1/4 tsp of salt and toss gently.

  5. In an airtight container or jar combine the oregano, remaining salt, pepper, vinegar and oil and mustard. Close the lid tightly and test to make sure there are no holes.

  6. Shake the container vigorously for 30 seconds to combine into a dressing and the oil and vinegar are not separated

  7. Pour desired amount of dressing (about half) onto the salad and toss. Serve
