Baked fresh with a fantastic taste!
- 2 large mixing bowls
- electric hand mixer
- Cutting Board
- Baking sheet
- Cooking Spray or Parchment paper
- Measuring Utensils
- 1 cup unsalted butter (softened)
- ¾ cup white sugar
- ¾ cup firmly packed brown sugar
- 2 large eggs
- 2 tsp vanilla
- ½ tsp cinnamon (optional)
- 2 cups whole wheat flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp kosher salt
- 3 cups oats
- 1 ½ cups raisins
Preheat oven to 375 degrees
Whisk dry ingredients (flour, oats, cinnamon, baking powder, baking soda, salt) and set aside
Mix wet ingredients (butter, sugar, vanilla, eggs) with hand mixer on low to cream. Increase speed to high and beat until fluffy as the color will lighten.
Stir the dry mixture into the wet mixture with a plastic or wooden spatula so everything is equally mixed. Only stir until the flour in no longer visible.
Add the raisins and stir.
Fill a #40 cookie scoop, or if you don't have one you can use two spoons to measure out 2 tablespoons of dough.
Drop them 2 inches apart onto a baking pan sprayed with nonstick baking spray (or lined with parchment paper).
Bake for 11-13 mins (on the middle rack) until golden brown but still moist beneath the cracks on top, remove from the oven.
Let them rest on the pan for 2 mins before transferring to a wire rack, or foil to cool
